Avocado Egg Salad
Servings: 6 • Size: 1/2 cup • Old Points: 3 pt • Points+: 4 pt (w/ light Flatout 7 pts)
Calories: 154.7 • Fat: 11.7 g • Protein: 9.3 g • Carb: 4.6 g • Fiber: 3 g • Sugar: 0.5 g
Sodium: 132 mg (without salt)

Ingredients:

  • 4 large hard-boiled eggs, chopped
  • 4 hard boiled egg whites, chopped (discard the rest)
  • 1 medium hass avocado, cut into 1/2-inch pieces
  • 1 tbsp light mayonnaise
  • 1 tbsp fat free plain yogurt
  • 1/2 tablespoon finely chopped chives
  • 2 teaspoons red wine vinegar
  • 1/2 tsp Kosher salt
  • pinch freshly ground pepper


Directions:

Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.

new spark of motivation

for some reason lately my life has been hard. i got into a bit of a problem and lost my job so i became incredibly stressed out to the point of sickness. but then my boyfriend and i went to the europa expo in orlando and it was a really great motivation. a lot of the girls there were intense and looked amazing and i also got great (free!) supplement samples that i want to try and revue over the next couple of weeks. i’ll start my review as soon as i get the money to get back into the gym and lift some weights!

As of this morning

I weighed 142, which is 3 pounds down from my previous weight of 145. I couldn’t believe it when I stepped on the scale. I literally had to get off and get back on to see if it was right. Moments like those really remind me of why I’m doing this.

So, for non-religious reasons I am giving up fast food/take out food from now until April. While Lent did inspire me to make this choice, I don’t really consider myself a Catholic I just did it to set a small goal so I can crack down on my eating. So here goes.
